It's difficult to be stressed out when you're sitting on your back porch at midnight in the summertime, with a good book, cold drink and a halo of hickory barbeque smoke swirling around your head. The meat was sizzling and the smoke, apart from shooing the mosquitoes away, was heavenly with the aroma of meat, spices and herbs. I couldn't have asked for better therapy to cure the effects of a stressful week.

There were 15 of us with our backs stooped and sweat running down our foreheads into our eyes. It had rained the night before and we were slipping and sliding down the long rows, trying to fill our buckets before the sun got too hot. Even early in the morning it was already 80 degrees and climbing.
As the day gets warmer, June Bugs, Wasps and Bumble Bees make the bean vines hum as they wake from their sleep.

This year's Whistle-Stop Barbeque Festival was great fun. I love great barbeque and the many different grills and smokers on parade almost made me want to buy one and hit the barbeque circuit. Some were painted black, some all stainless steel and there was one that looked like a big egg on wheels that was painted blue.

One thing all these fantastic grills had in common was that the cooks all used either wood or charcoal to cook their meat! None of the sissy electric grills or gas grills was allowed at this competition.

I have a simple solution to life's problems, as far as my physical health is concerned. I don't worry about things I can't spell! This is a skill that is learned; you're not born with it. I have to credit TV with this ability to block out concerns over my health by simply ignoring anything that could show up on the National Spelling Bee.

I learned this technique from listening to television commercials.

Winter weather in most of the south will usually not interfere with a good backyard barbeque. Most of us don't have to be concerned with sweeping snow off the grill in order to burn a steak. Our biggest challenge in the first cookout of the year is dusting the spiders and crickets out of the charcoal tray.

If you'll be using charcoal and a liquid lighter, know what kind of accelerant you're going to be pouring on those briquettes.

Wednesday morning I awoke at 2:36 am. I know this because the first thing I did was look at my digital clock and wonder why my left arm was tingling. I certainly hadn't stuck a paper clip into an electrical outlet during the night. My arm wasn't hurting, just tingling like crazy.
After lying there a few minutes I did the only thing that could possibly help the situation.

Even by my standards it's daunting to know that we have to cook 30 pork shoulders, 25 whole chickens and a whole bunch of ribs in order to feed to 600 to 700 people, and we have to do all this in less than 24 hours.

In the backyard barbeque cooker's Bible, it's almost blasphemous to give an electric smoker even an honorable mention in the "Best Smoker Category". To many of us, a smoker or grill that's attached to an electric cord is an insult to all of us who've smelled of wood smoke for a week because we stuck our head too close to the fire while adding charcoal!

Recently though, I've become an advocate of the electric meat smoker even if it does seem to be a sissy way of cooking a turkey, pork shoulder or beef brisket.

Developing a positive mental attitude is not exactly a piece of cake, but it can be done. Unless you already have one, it's hard to be self confident in any thing you under take. I recall quite vividly one self righteous gentleman telling me that I needed to have more self confidence. This was in the midst of family problems, a business going south and serious medical problems.

I would have killed for a cigarette! My nerves were shot and my future brother-in-law was congratulating me for having the physical and emotional strength to quit smoking. He said all this while he lighted another one. I had to keep smiling and pretend the smoke rising from the cigarette didn't bother me at all! As far as my fiance knew, I had given up smoking months before.
